Plum Clafoutis Recipe

One of my favorite summertime dessert recipes is clafoutis. Clafoutis is a rustic French dessert, very similar to flan with baked fruit. It looks divine when it comes out of the oven, puffed and golden and dotted with lovely juicy baked plums (or blackberries, or apricots, or cherries, or whatever fruit you choose…).

But here’s the secret about clafoutis — or at least, my version of it: it is SUPER EASY. This dessert could. not. be. simpler. Here’s the recipe:

Plum Clafoutis Recipe

Ingredients

  • 4 eggs
  • 1/3 cup sugar
  • 1 cup milk
  • 2 tsp vanilla
  • 3/4 cup flour
  • 5 small plums, pitted and halved

Preheat the oven to 375 degrees. Butter a pie pan. Distribute plum halves on pan (flat side down).

Put eggs, sugar, milk, vanilla, and flour in a blender. Blend until smooth. Pour over plums in pie pan.

Bake 10 minutes. Reduce temperature to 350 degrees and bake 35-40 minutes longer. Cool completely and, if desired, dust with powdered sugar.
